Dorito Casserole

Here’s a tasty recipe for Dorito Casserole that’s easy to make and sure to please a crowd!

Ingredients:

  • 1 lb (450 g) ground beef (or turkey)
  • 1 small onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies (like Ro-Tel)
  • 1 packet (1 oz) taco seasoning
  • 2 cups shredded cheddar cheese
  • 4 cups Doritos (Nacho Cheese flavor), crushed
  • Optional toppings: Sour cream, chopped green onions, sliced jalapeños, or fresh cilantro

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).

  2. Cook the Meat:

    • In a large skillet over medium heat, cook the ground beef and chopped onion until the meat is browned and the onion is soft. Drain any excess fat.
  3. Add Ingredients:

    • Stir in the black beans, corn, diced tomatoes (with their juices), and taco seasoning. Cook for an additional 5 minutes, stirring occasionally.
  4. Layer the Casserole:

    • In a greased 9×13-inch baking dish, spread half of the crushed Doritos evenly on the bottom.
    • Pour the meat mixture over the Doritos, spreading it evenly.
    • Sprinkle 1 cup of shredded cheddar cheese over the meat mixture.
    • Top with the remaining crushed Doritos and then sprinkle the remaining cheese on top.
  5. Bake:

    • Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  6. Serve:

    • Remove from the oven and let it cool for a few minutes. Serve warm, topped with your choice of sour cream, green onions, jalapeños, or cilantro.
