Smoked Brisket & Beer Cheese Pretzel Bombs

Here’s a delicious recipe for Smoked Brisket & Beer Cheese Pretzel Bombs that are perfect for a party or game day!

Ingredients:

For the Pretzel Dough:

  • 1 1/2 cups warm water (110°F to 115°F)
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda (for boiling)
  • Coarse sea salt (for topping)

For the Beer Cheese Filling:

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 cup beer (lager or ale)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For the Smoked Brisket:

  • 1 cup cooked smoked brisket, chopped

Instructions:

  1. Prepare the Beer Cheese Filling:

    • In a medium bowl, combine the shredded cheddar cheese, cream cheese, beer, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined. Set aside.
  2. Make the Pretzel Dough:

    • In a large bowl, combine warm water, yeast, and sugar. Let it sit for about 5 minutes until frothy.
    • Add the flour and salt to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
    • Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  3. Preheat the Oven:

    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Assemble the Pretzel Bombs:

    • Once the dough has risen, punch it down and divide it into 12 equal pieces.
    • Flatten each piece of dough into a circle. Place about 1 tablespoon of the beer cheese filling and a small amount of chopped smoked brisket in the center of each circle.
    • Fold the edges of the dough over the filling and pinch to seal, forming a ball. Ensure the filling is completely enclosed.
  5. Boil the Pretzel Bombs:

    • In a large pot, bring about 8 cups of water to a boil. Add the baking soda to the boiling water.
    • Carefully drop the pretzel bombs into the boiling water (in batches if necessary) for about 30 seconds. Remove with a slotted spoon and place on the prepared baking sheet.
  6. Bake:

    • Sprinkle the tops of the pretzel bombs with coarse sea salt. Bake in the preheated oven for 12-15 minutes, or until golden brown.
  7. Serve:

    • Allow the pretzel bombs to cool slightly before serving. Enjoy them warm with your favorite dipping sauce or additional beer cheese!
