Honey Lime Chicken & Avocado Lettuce Cups

Here’s a refreshing recipe for Honey Lime Chicken & Avocado Lettuce Cups:

Ingredients:

  • For the Chicken:

    • 1 lb (450 g) boneless, skinless chicken breasts
    • 1/4 cup honey
    • 2 tablespoons lime juice (freshly squeezed)
    • 1 tablespoon soy sauce
    • 1 teaspoon garlic powder
    • Salt and pepper to taste
  • For the Lettuce Cups:

    • 1 head of butter or romaine lettuce, leaves separated
    • 1 ripe avocado, diced
    • 1/4 cup red onion, finely chopped
    • 1/4 cup cilantro, chopped
    • Lime wedges for serving

Instructions:

  1. Marinate the Chicken:

    • In a bowl, whisk together honey, lime juice, soy sauce, garlic powder, salt, and pepper.
    • Add the chicken breasts to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
  2. Cook the Chicken:

    • Preheat a grill or skillet over medium-high heat.
    • Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
    • Once cooked, let the chicken rest for a few minutes before slicing it into bite-sized pieces.
  3. Prepare the Lettuce Cups:

    • While the chicken is resting, prepare the lettuce cups by washing and drying the lettuce leaves.
    • In a bowl, combine the diced avocado, red onion, and cilantro. Gently toss to mix.
  4. Assemble the Cups:

    • Place a few pieces of sliced chicken in each lettuce leaf.
    • Top with the avocado mixture.
  5. Serve:

    • Serve the lettuce cups with lime wedges on the side for an extra burst of flavor.
