Here’s a delightful recipe for Strawberry Shortcake Cheesecake that combines the creamy richness of cheesecake with the lightness of strawberry shortcake. This dessert is perfect for any occasion!

Strawberry Shortcake Cheesecake Recipe

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

For the Strawberry Topping:

  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup whipped cream (for serving)

Instructions

  1. Prepare the Crust:

    • Preheat your oven to 325°F (160°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  2. Make the Cheesecake Filling:

    • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy.
    • Add the vanilla extract and mix until combined.
    • Add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
    • Mix in the sour cream and flour until just combined. Be careful not to overmix.
  3. Bake the Cheesecake:

    • Pour the cheesecake filling over the cooled crust in the springform pan.
    • Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
    • Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
  4. Prepare the Strawberry Topping:

    • In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently to coat the strawberries. Let them sit for about 15-20 minutes to release their juices.
  5. Assemble the Cheesecake:

    • Once the cheesecake is chilled, remove it from the springform pan. Top with the macerated strawberries, allowing some of the juices to drizzle over the cheesecake.
  6. Serve:

    • Slice the cheesecake and serve with whipped cream on the side.
