Pineapple Cream Cheese Pie Recipe

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained (reserve juice)
  • 1 cup whipped topping (like Cool Whip)

For the Topping:

  • Additional whipped topping (for garnish)
  • Pineapple slices or chunks (for garnish)
  • Maraschino cherries (optional, for garnish)

Instructions

  1. Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan.
    • Bake the crust in the preheated oven for about 8-10 minutes, or until lightly golden. Remove from the oven and let it cool completely.
  2. Make the Filling:

    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Gradually add the powdered sugar and vanilla extract, mixing until well combined.
    • Stir in the drained crushed pineapple until evenly distributed.
    • Gently fold in the whipped topping until fully incorporated.
  3. Assemble the Pie:

    • Pour the cream cheese filling into the cooled graham cracker crust, spreading it evenly.
    • Refrigerate the pie for at least 2-3 hours, or until set.
  4. Serve:

    • Before serving, top with additional whipped topping, pineapple slices or chunks, and maraschino cherries if desired.
    • Slice and enjoy!
