Stuffed Breakfast Pretzel Rolls Recipe

Ingredients

For the Pretzel Dough:

  • 2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 3/4 cup warm water (about 110°F or 43°C)
  • 1/4 cup baking soda (for boiling)
  • Coarse sea salt (for topping)

For the Filling:

  • 4 large eggs
  • 1/2 cup cooked and crumbled breakfast sausage (or bacon)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced bell peppers (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the Dough:

    • In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
    • In a large mixing bowl, combine the flour and salt. Add the yeast mixture and mix until a dough forms.
    • Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  2. Prepare the Filling:

    • In a skillet, scramble the eggs until fully cooked. Add the cooked sausage, cheese, and diced bell peppers (if using). Season with salt and pepper. Mix well and set aside to cool.
  3. Preheat the Oven:

    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Shape the Pretzel Rolls:

    • Once the dough has risen, punch it down and divide it into 8 equal pieces. Flatten each piece into a circle and place a spoonful of the filling in the center.
    • Fold the edges of the dough over the filling and pinch to seal. Shape into a ball and place seam side down on the prepared baking sheet.
  5. Boil the Pretzel Rolls:

    • In a large pot, bring about 4 cups of water to a boil. Add the baking soda carefully (it will bubble up).
    • Boil each pretzel roll for about 30 seconds, then remove with a slotted spoon and return to the baking sheet. Sprinkle with coarse sea salt.
  6. Bake:

    • Bake in the preheated oven for 15-20 minutes, or until golden brown.
  7. Serve:

    • Allow the pretzel rolls to cool slightly before serving. Enjoy them warm!
