Here’s a flavorful recipe for Curry Lamb Chops that combines tender lamb with aromatic spices for a delicious dish!

Curry Lamb Chops Recipe

Ingredients:

  • 8 lamb chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 teaspoons curry powder (adjust to taste)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional, for heat)
  • 1 can (14 oz) coconut milk
  • 1 tablespoon tomato paste
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions:

  1. Marinate the Lamb Chops: In a bowl, combine the lamb chops with salt, pepper, and half of the curry powder. Let them marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).

  2. Sear the Lamb Chops: In a large skillet or pan, heat 1 tablespoon of olive oil over medium-high heat. Add the lamb chops and sear them for about 3-4 minutes on each side until browned. Remove the lamb chops from the pan and set aside.

  3. Cook the Aromatics: In the same pan, add the remaining tablespoon of olive oil. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

  4. Add Spices: Add the remaining curry powder, ground cumin, ground coriander, turmeric, and cayenne pepper (if using) to the pan. Stir well to coat the onions and cook for about 1-2 minutes to toast the spices.

  5. Add Coconut Milk and Tomato Paste: Pour in the coconut milk and add the tomato paste. Stir to combine and bring the mixture to a simmer.

  6. Return Lamb Chops to the Pan: Add the seared lamb chops back to the pan, spooning some of the sauce over them. Cover and simmer for about 15-20 minutes, or until the lamb is cooked to your desired doneness (medium-rare is about 145°F or 63°C).

  7. Serve: Once cooked, remove the lamb chops from the heat. Garnish with fresh cilantro and serve with lemon wedges on the side. These lamb chops pair well with rice, quinoa, or naan bread to soak up the delicious curry sauce.
