Here’s a delicious recipe for Homemade Potato Pizza, which features a crispy crust topped with thinly sliced potatoes, cheese, and herbs. It’s a unique and satisfying dish!

Ingredients:

For the Pizza Dough:

  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup warm water (about 110°F or 43°C)
  • 2 1/2 to 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 teaspoon sugar

For the Topping:

  • 2-3 medium potatoes, thinly sliced (Yukon Gold or Russet work well)
  • 1 cup shredded mozzarella cheese (or your favorite cheese)
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder (or 2 cloves fresh garlic, minced)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh rosemary or thyme (optional, for garnish)

Instructions:

Make the Dough:

  1. Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.

  2. Mix the Dough: In a large mixing bowl, combine 2 1/2 cups of flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms. If the dough is too sticky, gradually add more flour until it is smooth and elastic.

  3. Knead the Dough: Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth.

  4. Let it Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Prepare the Topping:

  1. Preheat the Oven: Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat.

  2. Prepare the Potatoes: While the dough is rising, thinly slice the potatoes (about 1/8 inch thick). You can soak them in cold water for about 30 minutes to remove excess starch, then drain and pat dry.

  3. Season the Potatoes: In a bowl, toss the potato slices with olive oil, garlic powder, oregano, salt, and pepper.

Assemble the Pizza:

  1. Roll Out the Dough: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it out into a circle or rectangle, depending on your preference and the shape of your baking sheet or pizza stone.

  2. Add the Toppings: Transfer the rolled-out dough to a baking sheet or pizza peel (if using a pizza stone). Sprinkle the shredded mozzarella cheese evenly over the dough. Layer the seasoned potato slices on top, overlapping them slightly. Finish with grated Parmesan cheese.

  3. Bake the Pizza: If using a pizza stone, carefully transfer the pizza onto the stone. If using a baking sheet, place it directly in the oven. Bake for about 15-20 minutes, or until the crust is golden brown and the potatoes are tender.

  4. Garnish and Serve: Remove the pizza from the oven and let it cool for a few minutes. Garnish with fresh rosemary or thyme if desired. Slice and serve warm.
