Ingredients

  • 2 pounds potatoes (Yukon Gold or red potatoes work well), peeled and cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 1/2 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 teaspoon dried thyme or rosemary for added flavor

Instructions

  1. Cook the Potatoes:

    • In a large pot, add the peeled and cut potatoes. Cover them with water and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain and set aside.
  2. Make the Garlic Cream Sauce:

    • In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant (be careful not to burn it).
    • Pour in the heavy cream and bring to a gentle simmer. If using, stir in the grated Parmesan cheese and mix until melted and smooth. Season with salt, pepper, and any herbs you’re using (thyme or rosemary).
  3. Combine Potatoes and Sauce:

    • Add the cooked potatoes to the skillet with the garlic cream sauce. Gently toss to coat the potatoes in the sauce. Let them simmer for a few minutes to absorb the flavors.
  4. Serve:

    • Transfer the potatoes to a serving dish and garnish with chopped fresh parsley. Serve warm as a side dish.
