Here’s a delicious recipe for Puff Pastry Potato Casserole! This comforting dish features layers of creamy potatoes and cheese, all encased in flaky puff pastry. It’s perfect as a side dish or a main course.

Puff Pastry Potato Casserole Recipe

Ingredients

  • For the Potato Filling:

    • 4 large potatoes (Russet or Yukon Gold), peeled and thinly sliced
    • 1 cup heavy cream (or milk)
    • 1 cup shredded cheese (cheddar, Gruyère, or your choice)
    • 1 medium onion, thinly sliced
    • 2 cloves garlic, minced
    • 2 tablespoons butter
    • Salt and pepper to taste
    • Optional: 1 teaspoon dried thyme or rosemary for added flavor
  • For the Puff Pastry:

    • 1 package (about 14 oz) frozen puff pastry, thawed
    • 1 egg (for egg wash)

Instructions

  1. Prepare the Potato Filling:

    • In a large skillet, melt the butter over medium heat. Add the sliced onions and cook until they are soft and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute.
    • In a large bowl, combine the sliced potatoes, cooked onions and garlic, heavy cream, shredded cheese, salt, pepper, and herbs (if using). Mix well to combine.
  2. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  3. Assemble the Casserole:

    • Grease a 9×13-inch baking dish or a similar-sized casserole dish.
    • Pour the potato filling into the prepared dish, spreading it evenly.
  4. Prepare the Puff Pastry:

    • Roll out the thawed puff pastry on a lightly floured surface if needed. You want it to be large enough to cover the entire casserole dish.
    • Place the puff pastry over the potato filling, trimming any excess pastry hanging over the edges. Press the edges down to seal.
  5. Egg Wash:

    • Beat the egg in a small bowl and brush it over the top of the puff pastry for a golden finish.
  6. Bake:

    • Bake in the preheated oven for 30-35 minutes, or until the puff pastry is golden brown and the filling is bubbling.
  7. Cool and Serve:

    • Allow the casserole to cool for a few minutes before slicing. Serve warm as a side dish or main course.

Tips:

  • Variations: You can add cooked bacon, ham, or vegetables (like spinach or broccoli) to the potato filling for extra flavor and nutrition.
  • Cheese Options: Feel free to mix different types of cheese for a more complex flavor.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
