Ingredients

For the Cake:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup whole milk

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup heavy cream (or milk)
  • 1 teaspoon vanilla extract
  • A pinch of salt

For Decoration (optional):

  • Fresh berries (like strawberries or raspberries)
  • Shredded coconut
  • Edible flowers

Instructions

  1. Prepare the Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy (about 3-5 minutes).
    • Add the egg whites one at a time, mixing well after each addition. Stir in the vanilla extract.
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.
  2. Bake the Cake:

    • Divide the batter evenly among the prepared cake pans. Smooth the tops with a spatula.
    • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
  3. Make the Frosting:

    • In a large mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined.
    • Add the heavy cream, vanilla extract, and a pinch of salt. Beat on high speed for about 3-5 minutes until the frosting is light and fluffy. Adjust the consistency with more cream or powdered sugar as needed.
  4. Assemble the Cake:

    • Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top.
    • Place the second layer on top and repeat the process. Add the third layer and frost the top and sides of the cake with the remaining frosting.
  5. Decorate:

    • Decorate the cake with fresh berries, shredded coconut, or edible flowers as desired.
  6. Serve:
