Gluten-Free and Dairy-Free Crepes Recipe

Ingredients

  • 1 cup gluten-free all-purpose flour (make sure it contains xanthan gum, or add 1/4 teaspoon if not)
  • 1 1/2 cups almond milk (or any dairy-free milk of your choice)
  • 3 large eggs
  • 2 tablespoons coconut oil or vegetable oil (plus more for cooking)
  • 1 tablespoon maple syrup or honey (optional, for sweetness)
  • 1/4 teaspoon salt
  • Optional: 1 teaspoon vanilla extract (for sweet crepes)

Instructions

  1. Prepare the Batter:

    • In a mixing bowl, whisk together the gluten-free flour and salt. If you’re making sweet crepes, add the maple syrup or honey and vanilla extract.
    • In another bowl, whisk together the almond milk, eggs, and melted coconut oil.
    • Gradually pour the wet ingredients into the dry ingredients, whisking until smooth. Let the batter rest for about 15-30 minutes. This helps the flour absorb the liquid and improves the texture.
  2. Cook the Crepes:

    • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a little coconut oil or cooking spray.
    • Pour about 1/4 cup of batter into the center of the pan and quickly swirl the pan to spread the batter evenly into a thin layer.
    • Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden. Carefully flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side.
    • Transfer the cooked crepe to a plate and repeat the process with the remaining batter, greasing the pan as needed.
  3. Serve:

    • Fill the crepes with your favorite sweet or savory fillings. For sweet crepes, consider using fresh fruit, dairy-free yogurt, nut butter, or maple syrup. For savory crepes, try sautéed vegetables, dairy-free cheese, or cooked meats.
    • Roll or fold the crepes and serve warm.

Tips:

  • Storage: Cooked crepes can be stored in the refrigerator for up to 3 days. Reheat them in a skillet or microwave before serving.
  • Freezing: You can also freeze the crepes. Place parchment paper between each crepe to prevent sticking, then store them in an airtight container or freezer bag.
  • Flavor Variations: Feel free to add spices like cinnamon or nutmeg to the batter for extra flavor, especially for sweet crepes.
