Healthy Apple Spice Cake Muffins Recipe

Ingredients

  • Dry Ingredients:

    • 1 1/2 cups whole wheat flour (or a mix of whole wheat and all-purpose flour)
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground ginger (optional)
    • 1/4 teaspoon salt
  • Wet Ingredients:

    • 1/2 cup unsweetened applesauce
    • 1/4 cup honey or maple syrup (adjust based on sweetness preference)
    • 1/4 cup coconut oil or vegetable oil, melted
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 cup grated or finely chopped apple (about 1 medium apple)
  • Optional Add-Ins:

    • 1/2 cup chopped nuts (such as walnuts or pecans)
    • 1/2 cup raisins or dried cranberries

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. Mix Dry Ingredients:

    • In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, ginger (if using), and salt.
  3. Mix Wet Ingredients:

    • In another bowl, combine the applesauce, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Whisk until well combined.
  4. Combine Mixtures:

    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
    • Gently fold in the grated or chopped apple, and any optional add-ins like nuts or dried fruit.
  5. Fill Muffin Tin:

    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake:

    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Cool and Serve:

    • Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature!
