Ingredients:

  • 1/2 cup red grapes (halved) or apples (diced) for a touch of sweetness (optional)

Instructions:

  1. Prepare the chicken: If you haven’t already, cook the chicken by poaching, roasting, or using leftover rotisserie chicken. Shred or chop the chicken into bite-sized pieces.
  2. Make the dressing: In a large bowl, combine the mayonnaise, Dijon mustard (if using), lemon juice, salt, pepper, and garlic powder (if using). Stir to combine until smooth.
  3. Add the veggies and fruits: Add the diced celery, red onion, and any optional ingredients like grapes, apples, or parsley to the bowl.
  4. Mix the chicken: Add the shredded or chopped chicken to the bowl and stir until everything is well coated with the dressing.
