Coconut chewies are a delightful sweet treat made with coconut and sugar, often combined with other ingredients like condensed milk, butter, or vanilla to create a chewy, slightly gooey texture. These treats are typically rolled into small balls or pressed into bars, offering a sweet, tropical flavor with the richness of coconut.

Here’s a simple recipe for making coconut chewies:

Ingredients:

  • 2 cups shredded coconut (sweetened or unsweetened)
  • 1 cup sweetened condensed milk
  • 2 tablespoons butter (melted)
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy removal of the chewies.
  2. Mix the ingredients: In a large bowl, combine the shredded coconut, sweetened condensed milk, melted butter, vanilla extract, and a pinch of salt. Stir everything together until fully mixed.
  3. Form the chewies: Using your hands or a spoon, scoop out spoonfuls of the mixture and roll them into small balls (about 1 inch in diameter) or form them into small mounds. Place them on the prepared baking sheet.
  4. Bake: Bake for about 10–12 minutes, or until the coconut chewies are golden brown on the edges and lightly toasted on top.
  5. Cool: Remove the tray from the oven and let the coconut chewies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  6. Serve: Enjoy these coconut chewies as a sweet, chewy snack with a tropical flair!
