Here’s a delicious recipe for Chocolate Chip Sourdough Bagels! These bagels are a delightful twist on the classic, combining the tangy flavor of sourdough with sweet chocolate chips. They’re perfect for breakfast or a sweet snack!

Chocolate Chip Sourdough Bagels Recipe

Ingredients

  • For the Dough:

    • 1 cup active sourdough starter (fed and bubbly)
    • 1 cup warm water (about 110°F or 43°C)
    • 3 cups bread flour (plus more for dusting)
    • 1/2 teaspoon salt
    • 1/4 cup granulated sugar
    • 1 cup chocolate chips (semi-sweet or dark)
  • For Boiling:

    • 2 quarts water
    • 1 tablespoon baking soda
    • 1 tablespoon honey or malt syrup (optional, for flavor)
  • For Topping (optional):

    • Coarse sea salt or additional chocolate chips

Instructions

  1. Mix the Dough:

    • In a large mixing bowl, combine the active sourdough starter and warm water. Stir to combine.
    • Add the bread flour, salt, and sugar. Mix until a shaggy dough forms.
    • Gently fold in the chocolate chips until evenly distributed.
  2. Knead the Dough:

    • Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
  3. First Rise:

    • Place the dough in a lightly greased bowl, cover it with a clean cloth or plastic wrap, and let it rise at room temperature for about 4-6 hours, or until it has doubled in size. Alternatively, you can let it rise in the refrigerator overnight for a slower fermentation.
  4. Shape the Bagels:

    • Once the dough has risen, turn it out onto a floured surface and divide it into 8 equal pieces.
    • Roll each piece into a ball, then use your finger to poke a hole through the center to form a bagel shape. Gently stretch the hole to about 1-2 inches in diameter.
  5. Second Rise:

    • Place the shaped bagels on a parchment-lined baking sheet. Cover them with a clean cloth and let them rest for about 30-60 minutes.
  6. Preheat the Oven:

    • Preheat your oven to 425°F (220°C).
  7. Boil the Bagels:

    • In a large pot, bring the water to a boil. Add the baking soda and honey (if using).
    • Carefully drop the bagels into the boiling water, a few at a time, and boil for about 1-2 minutes on each side. Use a slotted spoon to remove them and place them back on the parchment-lined baking sheet.
  8. Bake the Bagels:

    • If desired, sprinkle coarse sea salt or additional chocolate chips on top of the bagels before baking.
    • Bake in the preheated oven for 20-25 minutes, or until golden brown.
  9. Cool and Serve:

    • Remove the bagels from the oven and let them cool on a wire rack. Enjoy them fresh, toasted, or with your favorite spread!

Tips:

  • Sourdough Starter: Make sure your sourdough starter is active and bubbly for the best results. Feed it a few hours before starting the recipe if needed.
  • Storage: Store any leftover bagels in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
  • Variations: Feel free to add nuts, dried fruit, or spices to the dough for extra flavor.
