Ingredients

  • 2 large egg whites
  • 1/2 teaspoon cream of tartar
  • 1/2 cup granulated sugar (or a sugar substitute, if desired)
  • 1 teaspoon vanilla extract (or any other flavoring, like almond or lemon)
  • Optional: food coloring (for a fun touch)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper.
  2. Prepare the Egg Whites:

    • In a clean, dry mixing bowl, add the egg whites and cream of tartar. Make sure there is no yolk in the egg whites, as this can prevent them from whipping properly.
  3. Whip the Egg Whites:

    • Using an electric mixer, beat the egg whites on medium speed until they become frothy. Gradually increase the speed to high and continue to beat until soft peaks form.
  4. Add Sugar:

    • Gradually add the granulated sugar (or sugar substitute) one tablespoon at a time, continuing to beat until the mixture is glossy and stiff peaks form. This may take about 5-7 minutes.
  5. Add Flavoring:

    • Gently fold in the vanilla extract (or other flavoring) and any food coloring, if using.
  6. Pipe or Spoon the Meringue:

    • Using a piping bag or a spoon, drop or pipe small mounds of the meringue onto the prepared baking sheet, leaving space between each cookie.
  7. Bake:

    • Bake in the preheated oven for about 1.5 to 2 hours, or until the meringue cookies are dry and can easily lift off the parchment paper. They should be crisp on the outside and slightly chewy on the inside.
  8. Cool:

    • Turn off the oven and leave the cookies inside to cool completely. This helps them dry out further and prevents cracking.
  9. Serve:
