Here’s a simple and delicious recipe for chocolate peanut butter protein cookies. These cookies are packed with protein, making them a great snack or post-workout treat!

Chocolate Peanut Butter Protein Cookies

Ingredients

  • Dry Ingredients:

    • 1 cup rolled oats (or oat flour for a smoother texture)
    • 1/2 cup chocolate protein powder (whey or plant-based)
    • 1/4 cup unsweetened cocoa powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
  • Wet Ingredients:

    • 1/2 cup natural peanut butter (or almond butter)
    • 1/4 cup honey or maple syrup (adjust based on sweetness preference)
    • 1/4 cup unsweetened applesauce (or mashed banana)
    • 1 teaspoon vanilla extract
  • Optional Add-ins:

    • 1/2 cup dark chocolate chips or chunks
    • 1/4 cup chopped nuts (like walnuts or almonds)
    • 1/4 cup shredded coconut

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix Dry Ingredients:

    • In a large mixing bowl, combine the rolled oats, protein powder, cocoa powder, baking soda, and salt. Mix well.
  3. Mix Wet Ingredients:

    • In another bowl, combine the peanut butter, honey (or maple syrup), applesauce, and vanilla extract. Mix until smooth and well combined.
  4. Combine Mixtures:

    • Pour the wet ingredients into the dry ingredients and stir until fully combined. If the mixture is too dry, you can add a splash of milk (dairy or non-dairy) to help it come together.
  5. Add Optional Ingredients:

    • If using, fold in the chocolate chips, nuts, or shredded coconut.
  6. Form Cookies:

    • Using a tablespoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of a spoon, as they won’t spread much during baking.
  7. Bake:

    • Bake in the preheated oven for 10-12 minutes, or until the edges are set. The cookies will look soft but will firm up as they cool.
  8. Cool:

    • Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  9. Store:

    • Store the cookies in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
