Hambach bread

Hambach bread, also known as “Hambacher Brot,” is a traditional German bread that is often associated with the Hambach Festival, a significant event in German history that took place in 1832. This bread is typically a hearty, rustic loaf that can be enjoyed with various toppings or as a side to meals. Here’s a simple recipe to make your own Hambach bread at home.

Ingredients

  • 500 g (4 cups) all-purpose flour (or bread flour)
  • 300 ml (1 1/4 cups) warm water
  • 1 packet (7 g or 2 1/4 teaspoons) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil (optional, for added flavor)
  • Seeds for topping (such as sesame, sunflower, or pumpkin seeds, optional)

Instructions

Prepare the Dough

  1. Activate the Yeast:

    • In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy.
  2. Mix the Ingredients:

    • In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil (if using).
  3. Knead the Dough:

    • Mix the ingredients until a dough forms. Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. You can also use a stand mixer with a dough hook for this step.

First Rise

  1. Let the Dough Rise:
    • Place the kneaded dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Shape the Bread

  1. Shape the Dough:

    • Once the dough has risen, punch it down to release the air. Transfer it to a floured surface and shape it into a round or oval loaf, depending on your preference.
  2. Second Rise:

    • Place the shaped dough on a baking sheet lined with parchment paper or in a greased loaf pan. Cover it again and let it rise for another 30-60 minutes until it has puffed up.

Bake the Bread

  1. Preheat the Oven:

    • Preheat your oven to 220°C (425°F).
  2. Add Toppings (Optional):

    • If desired, brush the top of the loaf with water or olive oil and sprinkle with seeds.
  3. Bake:

    • Bake the bread in the preheated oven for about 25-30 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  4. Cool:

    • Remove the bread from the oven and let it cool on a wire rack before slicing.
